Pizza. Just say the word to understand we are talking about the most famous Italian gastronomic product in the world and, in its alternative version by the slice, of one of the tastiest street food on the market.
As is known, besides the standard version - tomato, mozzarella and olive oil-based –, pizza can be characterized thanks to a variety of topping products.
Each one of the twenty Italian regions has an assortment of D.O.P. and I.G.P products that could be used as high quality toppings.
Milan EXPO 2015 reminded the world that Italy is the country with the largest number of these D.O.P. and I.G.P. products in the European Union owing 271 classifications of this kind.
Tuscany, the most famous Italian region for its wonderful landscapes and traditional cuisine, has 27 D.O.P. and I.G.P., most of them delicious for pizza topping. From this idea the Tuscan Pizza was born, an innovative street food realized with traditional products but able to renew the recipe and make it even tastier, communicating to customers the Italian gusto for food and good living.
We aim to use three main toppings: the Porcine Mushroom typical of Tuscan mountains, the Colonnata Bacon and the Tuscan Sausage.
The Porcine (Boletus Edulis) is the best mushroom possible. Solid and big, its smell and taste are intense. It is used as a protagonist of many typical Tuscan recipes or alone, to be eaten fried or in oil.
Colonnata Bacon is one of the best I.G.P. Italian charcuterie made in the Tuscan village of Colonnata that belongs to the town of Carrara, on the Apuan Alps, where Michelangelo went to take the marble for his statues. This product is made from swine lard matured in marble containers and seasoned with aromatic herbs whose recipe is a secret of each family in Colonnata.
Tuscan Sausage is one of the best Italian varieties thanks to the quality of the meats used and the traditional way of preparation made from particular herbs that give the sausage a typical taste.
